Description
Morbier AOC is a semi-hard French cheese made in the Jura Department. It is characterized by its two layers of curd separated by an ash line, a traditional method that comes from the time when Comté makers used leftover curd for personal consumption. The raw milk used comes from cows of the Montbéliarde or Simmental française breeds, which feed on natural grasses in summer and hay in winter. This cheese is made in cooperatives and matures for at least 8 weeks, developing a unique flavor with fruity and fine herb aromas, and a light touch of cream.
