Blue Stilton is a soft blue English cheese, made with pasteurized cow's milk and inoculated with Penicillium Roqueforti. Originating from the counties of Derbyshire, Leicestershire and Nottinghamshire, this cheese is matured for at least 3-4 months. World famous, Stilton is undoubtedly the most famous English cheese, traditionally served at Christmas between turkey and Plum Pudding. It is one of the few British cheeses covered by a designation of origin. Blue Stilton is characterized by its creamy but crumbly texture and its intense flavor, which becomes softer, creamier and smoother with maturation.
