Description: Cruz del Castillo makes goat cheese on the Island of La Palma using cured milk from the Palmera goat. The cheese-making process involves the use of freshly milked milk from their own herd. After rennet is added, the curd is cut into small grains, rested, shaped by hand and salted with locally sourced sea salt, taking up to two days to complete. This completely artisanal process, carried out on a small scale, contributes to the unique flavor profile of the cheese. The cheese matures from 7 to 60 days.

Tasting Notes

When young, this cheese offers a creamy texture with soft, herbaceous notes. As it ages, it develops a firmer texture and a richer, more complex flavor profile, influenced by the altitude at which the goats graze, as well as the grass and forage they consume.
