Beaufort is a pressed and cooked paste cheese, made with whole raw milk. This cheese is produced exclusively in the high mountain area of ​​the Department of Savoy, taking advantage of the diversity of the alpine flora. The Beaufort's concave rind, molded into a beech ring, makes it easy to transport and prevents the cheese from sinking. Depending on the season, it is made as a summer Beaufort, with milk from flowering grasses, or a winter Beaufort, with milk from cows fed mainly on hay.

Tasting Notes

Beaufort has a very fruity flavor with floral nuances. The paste is flexible and pale yellow in color.

Pairing Suggestions

This cheese pairs well with artisan breads, dried fruits and a glass of dry white wine or a young red wine. It is also ideal to enjoy on cheese boards or melted in dishes such as fondue.
